Welcome to the 2008 LollyChops Squash-Off (Kick-Off)
A couple of weeks ago Robyn's mom posted a comment about Robyn's fabulous squash recipe (Robyn was Sunday guest posting Carrot Cake Cookies (some of the best cookies ever folks). I think her exact words were: "...Also, the squash dressing is soooo good. It will make you love squash if you don't already..."
I don't know about you, but I can smell a challenge a mile away. You see, I too have a pretty decent squash recipe (one that I have been making and perfecting for 10 solid years). I decided that Robyn and I needed to have a Squash Casserole DUEL (a.k.a The 2008 Squash-Off)!
So this is what I was thinking..it just so happens that I am having a potluck lunch this Friday at work. I work with Robyn's hub so I asked her if she would make her squash recipe for the potluck and then I would make mine. I am going to make little Squash-Off ballots (got to keep in the spirit of the season you know) and place them next to the two Squashilicious Dishes. I will of course be campaigning hard for my squash recipe (hopefully her hub will be doing the same for hers (he had better or his life might be on the line).
So what does this mean for you guys???? I was thinking that you might want to have a little Squash-Off of your own at your homes this weekend (or offices - that can work too). I am going to give you both recipes below and then invite you to come on over here this Sunday to check out the pics from the potluck AND cast your very own vote on which recipe you preferred (basically I'll tally the votes from the potluck with your votes and then we'll see who really has the best squash recipe)! This is all in good fun of course! I am pretty sure Robyn is gonna win (NOT). heheheh.. easy girl.

So here we go!
1 package Jiffy Cornbread mix, prepared
2+ cups boiled sliced squash, very well drained
5 Tablespoons butter, melted
Scant cup sour cream
1 can condensed cream of celery soup
Chopped onion
Salt and pepper
Make the cornbread ahead of time. Crumble in a large bowl, throw in the rest of the ingredients and mix together until it's the consistency you like (squash more intact with some cornbread chunks or all mashed together) and bake for about 45 minutes at 350 degrees. If you wanted to use a different cornbread mix, I'd add a little sugar to the mix.
--OR--
8-10 Yellow squash (sliced)
1 medium sweet onion
1 1/2 cups Parmesan cheese
2 Tablespoons butter
2 eggs
1/2 Teaspoon salt & 1/2 Teaspoon pepper
Scant shake or two of nutmeg
1 Cup Italian breadcrumbs
Slice and brown the onion in olive oil. Steam or Boil the sliced squash (drain - does not have to be too dry). As soon as it's finished cooking and drained a little make sure you get the butter mixed in with it so it can melt.
Lightly beat the eggs and combine them with all of the ingredients except the breadcrumbs (you can mix everything in your casserole dish). Mash the squash just a little as you are mixing everything together. Once that's done smooth down the top of the squash mix and sprinkle with the breadcrumbs.
Bake at 350 for 45 - 55 minutes (it might be just a little jiggly in the middle but that's ok).
I hope you have an opportunity to participate with us. If not that's ok! We'll have about 35 folks at the potluck who will be forced into the taste test whether they like Squash it or not!
