Hi everyone! Remember me?!?! I feel like I have been away for about 324 years and it's only been a week. I have seriously missed you guys! I am back and feeling MUCH better AND I have a massive week of crafts planned! I can hardly wait to share everything with you!
Today my guest is Tricia from HippieFamily! She's sharing a terribly romantic recipe containing Popeye's favorite food - spinach! Let's get rolling with the interview first and then we'll move on to the recipe! YAY for one of my very most favorite foods ever (even when I was a wee little Lolly)!
Lolly Chops : What's your favorite ingredient when cooking?
Tricia : Sugar.. I love to bake more than cook.
Lolly Chops : What's your favorite memory associated with food (date, family dinner,
cooking with someone, etc…)?
Tricia : This is so silly but it's Jello with Fruit
in it.. my grandmother made it all the time when I was little.. It's
the one thing I remember about her. My Godmother had the Tupperware
with the shaped tops and all us kids thought we were soooo fancy having
it from the fancy parfait cups.
Lolly Chops : What is your all-time favorite comfort food?
Tricia : Chocolate.. ya, just about anything chocolate..
Lolly Chops : Tell us something we'd be surprised to learn about you.
Tricia : Oh um..
hmm.. I love to sleep, more than just about anything else... I get my
best ideas that way.. oh and I used to play hockey :)
Lolly Chops : I'll have to remember that when I round up the team members for the LollyChopsHockeyCraftstravaganza!
Lolly Chops : What's your favorite color combination?
Tricia : I love yellow, and pink, and green..
Lolly Chops : Do you find yourself gravitating toward it over and over?
Tricia : I do find
that I move to that a lot but not in my decorating, it shows I am a
"fall"
Lolly Chops : Sharp, silky, mild, tangy, moldy, stinky... what kind of cheese would
you be?
Tricia : I would consider myself sharp.. but as they say.. "it's not
easy, bein cheesy "
Lolly Chops : How do you like your coffee..heck.. do you even drink coffee?
Tricia : I LOVE

kidding, I love my coffee, or espresso with just a tiny bit of non fat milk. That's all. no cream, no sugar..
Lolly Chops : Tell us how you really feel Tricia. Let it ALL out. 7 cups? Was that all? hehe
Tricia : I am a fan of almond flower, and snapdraggons. Because they can talk (a lot) like me:)
Lolly Chops : Oh neat..you will have to leave a comment and let me know what in the heck you make with almond flour!
Now on to something really easy!
Lasagna Spinach Roll-Ups
Ingredients:
1 (16 ounce) package lasagna noodles (12 noodles or so from this pack)
2 tablespoons butter
2 cups small curd cottage cheese
1 (10 ounce) packages frozen chopped spinach, thawed and well drained
2 eggs, lightly beaten
6 tablespoons grated Parmesan cheese, divided
1 teaspoon black pepper
2 large jar of spaghetti sauce
1/2 teaspoon garlic (I use jarred for this recipe)
2/3 cup shredded mozzarella cheese
Cooking Instructions:
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain and pat dry.
Thaw the spinach or microwave at 50% for 3 to 4 minutes to thaw. Drain.
In a bowl combine the cottage cheese, spinach, eggs, 4 tablespoons of cheese and pepper; mix well.
Spread a scoop of filling on each noodle. Roll up and place in greased 9x13-inch baking dish. Pour tomato sauce mixture over lasagna rolls. Sprinkle with mozzarella cheese and remaining Parmesan cheese. Cover and bake in a preheated oven for 40 minutes.
That sounds super easy (and healthy too)!
