I am excited to welcome back Shaina of Just Because I am Me (the very same Shaina who had an apron giveaway this past week...and WOW-O did you guys show up at her place in FORCE!!). WTG GUYS!!!
Shaina is sharing her recipe for Super Yummy Chicken Salad (aka Grape Chicken Salad). I loves me a good chicken salad and this looks to be one that lives up to it's name!
Let's get started with the interview and we'll roll right into the recipe!
LollyChops: Have you ever started a vegetable garden. If the answer is yes - what did you grown in your last one. If no, what would you grow in one if you started it.
Shaina: I really really want to have a garden. Someday I will, when we own our own house and can make a little garden plot. Right now I have a little herb garden, and it gets all my love.
LollyChops: What is the most unusual fruit or vegetable you have ever picked?
Shaina: Can't say that I've picked a whole lot of fruit, but I'll eat almost any fruit except a banana.
LollyChops: Sharp, silky, mild, tangy, moldy, stinky... what kind of cheese would you be?
Shaina: Gross. This question just makes me sick. I really don't like cheese. Sorry! Blame it on the lactose intolerance.
LollyChops: How do you like your coffee..heck.. do you even drink coffee?
Shaina: Nope. Don't drink coffee, but I love hot chocolate!
LollyChops: How do you open a stuck jar lid? Banging, knife, spouse, fancy pry bar jar device...? OR are you a Miss I never have a problem because I have Abs of Steel (I just use my abs to open jars).
Shaina: There aren't very many jars that can escape my massive muscles. It's really not a fair fight. Ok, so I might be exaggerating..just a teensie bit.
LollyChops: Favorite flour..and umm.. favorite flower too.
Shaina: I love using wheat flour for rolls, self rising flour for biscuits, and my favorite flowers are tulips!
LollyChops: How do you take your pepper? Milled or already ground?
Shaina: Love milled pepper. I buy it in bulk at costco.
LollyChops: Butter or I can't believe they call it butter?
Shaina: Don't care as long as I don't run out of it.

Grape Chicken Salad
4 cups cooked chicken, seasoned with salt and pepper
1 1/2 cups red grapes, sliced in half
1 cup chopped celery
3/4 cup chopped green onions
4 hard boiled eggs, chopped
1 pg (2 oz) slivered almonds
Dressing
1/2 cup mayo
1/4 cup sour cream
1 Tbsp dijon mustard
1/2 tsp dry mustard
1/2 tsp pepper
1/4 tsp onion salt
1/4 tsp paprika
After you make the dressing, taste it to see if it needs more salt. When all is good, combine all the salad ingredients in a large bowl. Mix in the dressing. Keep refrigerated until ready to serve. This salad tastes great by itself, or you can put it on a crescent roll and make a sandwich out of it. Enjoy.
