Heidi ho friends! Today my guest is Stephanie from Dancy Doodle! She's sharing a super fabulous (and slightly mean) meatloaf recipe with you all (don't be scared.. he's friendly once you get to know him) Honest!
Let's get going with the interview!
LollyChops: What's your favorite ingredient when cooking?
Mrs. Doodle: Olive oil without a doubt. I love that stuff and use it a lot. I also love me some salt and pepper from my Alessi grinders.
LollyChops: What leftovers do you have lurking in your fridge right now?
Mrs. Doodle: Ha ha... meatloaf and mashed potatoes.
LollyChops: What topping(s) do you like on your pizza?
Mrs. Doodle: mushrooms and pepperoni
LollyChops: What recipe do you cook best (the one you are known for or that all your friends always want you to make)?
Mrs. Doodle: Meatloaf, mashed potatoes, and green beans. Pound cake is also a requested recipe as well. Stay tuned for that recipe. :)
LollyChops: I am sensing a pattern here... hmmmm interesting.
LollyChops: What's your favorite memory associated with food (date, family dinner, cooking with someone, etc…)?
Mrs. Doodle: I have to say this one is a hard one for me. I have a big family that cooks so I have a lot of cooking memories. My grandma made a birthday cake for me when I was little, don't remember the age I was turning, and she let me pick out what I wanted. I remember a ballerina being on it and she had lots of icing that she decorated around it. Right after my baby girl was born (about 16 months ago) my grandma passed away unexpectedly. I didn't really get to say goodbye or visit her while she was in the hospital because I had a new baby. It was hard for me but it makes me happy that I have memories like that birthday to remember her by. She is also the person that taught me how to make yummy homemade biscuits. Let's just say crisco was in them and they were GOOD! So I have a lot of great memories of the people I love and what they have cooked over the years.
LollyChops: Who is your favorite celebrity chef?
Mrs. Doodle: Ha. I know Lolly might get me for this one... but my husband and I watch Top Chef. We love that show. Well, this season I wanted Team Euro to win so badly! I loved Fabio the most and I almost stopped watching the show when he got kicked off. I loved him. I told my husband many times throughout the season that Fabio's accent was just too sexy. I think my husband is the most handsome man in the world but oh that accent. Okay I need to move on. I need to keep this g rated. Sorry Lolly readers. You would agree with me if you watched I know you would. :)
LollyChops Note: I was copying and pasting this interview and spotted "g rated" and did a double take. hehe Fabio is the 'I can't believe it's not butter' guy right? Long hair, covered in muscles (I have no idea what he sounds like.. I just remember the hair and the muscles... I have a weakness for muscles). oops. Look what you did Steph! Moving on!!!
LollyChops: If a recipe calls for a clove of garlic – how much do you really use?
Mrs. Doodle: A LOT!!!! Way more than I should.
LollyChops: Not possible!!!
LollyChops: If a recipe calls for vanilla – do you let the vanilla spill over the measuring spoon a little or a lot (or do you just double it like I do)?
Mrs. Doodle: SPILL... is there any other way of doing it?
LollyChops: Not that I have discovered!
LollyChops: What is your all-time favorite comfort food?
Mrs. Doodle: Brownies. I love brownies. My husband doesn't eat them so it is a bad thing when I make them around this house - I end up eating all of them all by myself. Bad me!
LollyChops: Just give me a call Steph. I'll come to the rescue!
LollyChops: How do you like your coffee..heck.. do you even drink coffee?
Mrs. Doodle: My husband got me drinking coffee on one of our trips to New York. We had just started dating and we went to Starbucks and got a vanilla latte. I was hooked. On a daily basis I have my coffee with sugar and milk. I do love a vanilla latte as a treat every now and then. Oh they are so good.
LollyChops: How do you take your pepper? Milled or already ground?
Mrs. Doodle: I buy the salt and pepper grinders by Alessi. I love those. I don't know what my life would be without them.
LollyChops: Butter or I can't believe they call it butter?
Mrs. Doodle: Olive Oil butter. OMG... this stuff is so good. I have told so many people about it and it is now the only butter they use! It is that good. I told you I liked Olive Oil. he he
LollyChops: I totally have not tried that.. but I use olive oil mayo and am HOOKED! So I imagine the butter is just as good!

One Mean Meatloaf
1.50 lbs Ground beef
1.00 lbs Ground pork
1/2 cup bread crumbs
1 egg
1 Tbs garlic (minced)
1 Tbs Balsamic vinegar
1 Tbs. Worcestershire sauce
1 Tbs. A-1 steak sauce (any flavor will work)
3 Tbs. ketchup
1/2 medium onion
1/2 Tbs garlic salt
salt and pepper
Mix everything together. Put in a loaf pan. Make a mountain with the meat so when you put the sauce on it will pour down the sides. Bake at 425 for 45 mins. The meat will be solid in the center when it is done. Carefully pour off grease drippings (I put mine in a cup and let it cool before I discard it). Broil on low for a couple of minutes to caramelize the top (make the top get bubbly). Take out and let rest for 5 minutes. Enjoy.
Sauce (save some for dipping)
1/2 cup ketchup
3 Tbs vinegar
1/2 cup + 1 Tbs. brown sugar
